Scooby-Stacks Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 cups milk
  • 2 eggs
  • ¼ cup melted butter (plus extra for cooking)
  • 1 tsp vanilla extract
  • 2 bananas, sliced
  • ½ cup mini chocolate chips
  • ½ cup peanut butter (slightly warmed)
  • Whipped cream, for topping

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk milk, eggs, melted butter, and vanilla. Combine wet and dry ingredients until just mixed.
  3. Heat a buttered griddle or skillet over medium heat. Pour batter to form pancakes. Cook until bubbles form, flip, and cook until golden.
  4. Stack pancakes high (the Scooby way!) with layers of banana slices, chocolate chips, and drizzled peanut butter in between.
  5. Top with whipped cream and more chocolate chips. Serve with a giant mug of milk—Scooby style.
